I am not one of the world’s greatest bakers. Most of my baking consists of adding water to premixed muffin and cake “in a box”, tipping it into a tray and waiting for the buzzer to go off. I do however enjoy advancements in technology, which is where silicon muffin trays come in. The first time I encountered a silicone muffin tray I was incredibly sceptical. How could this flimsy rubber looking thing survive in an oven? But after I’d used a silicone muffin tray once, I was convinced. They’re easy to work with, easy to clean, and unlike metal trays they simply won’t scratch. And the weird thing is, they don’t melt.
